Slow Cooked Chicken and Vegetables with Lemon and Herbs #recipe

We got a slow cooker for Christmas, our 'we' present :). Since then I have been eagerly perusiing slow cooker recipes to see what caught my taste buds. Picky Palate came to my rescue with something I just had to try. I adapted her original recipe since my idea of slow cooking is to dump everything in and wait for it to finish so all you have to do is dig in! 


Why yes, I do shop at Trader Joes! Feel free to shop at your favorite grocer.

Here's a hint on keeping seeds out of your juice: use a slotted spoon.The seeds will be caught and can be easily tossed into the compost bin instead of being sworn at as you try to retrieve them from the bottom of your glass.

Ingredients: 


2 Large Organic boneless, skinless Chicken Breasts

1 pound Pearl Onions, peeled
1 pound Green Beans (haricot verts)
10 Organic baby Potatoes, peeled (maybe halved)
10 cloves Garlic, peeled
1 Cup Organic Chicken broth
1 Cup water
Juice of 2 Organic Lemons
1 Tsp Sea Salt
.25 oz Organic Thyme
.25 oz Organic Parsley

Place pearl onions and greens beens into crock pot, set on low. I used frozen veggies so they sat for a little while as I peeled the garlic and potatoes. Place chicken breasts on top of veggies. Follow with potatoes and garlic pieces. 

Pour the chicken broth into the pot. 
Juice the lemons into the cup of water, pour over chicken pieces. 
Finish by tossing in the sea salt, thyme and parsley.

Cook 6-8 hours, depending on your crock pot. Enjoy 'straight' or with your favorite carb!

  5. My daughter gave me her slow cooker, what a time saver and no brainer. I eat only organic and live in a large city with many organic stores. Now I am learning how to season my dishes so I liked to read about the use of thyme and parsley in this recipe that I will be repeating often! Thanks!
