Spicy Apple Cranberry Date Loaf Vegan Recipe cbias shop

When Mariano's opened in a nearby Chicagoland suburb, Hubby was excited to see what the hubbub was all about. We were surprised to find crisply uniformed checkers and baggers along with a live piano player! 

Suffice it to say that when Hubby noticed the 'Mariano's Coming Soon' sign just five minutes from our house, he was ecstatic. Once our very own store opened, we were there, very often. Shopping at Mariano's is an experience, from the friendly and numerous employees ready to help, to the juicing machine producing unadulterated orange juice, to the product sampling tables that surprise you at every visit.

Take for instance, a flash mob! Look what happened to the customers (and employees!) in this store.

No flash mobs when we went in search of seasonal organic apples though, just a fun fall display outside.

We love that our special grocery store has a large organic produce section, offering many varieties of both fruits and vegetables. Tubby loves to help me pick items. We also use our Rewards card to keep track of our purchases every time so they add up! We are never disappointed with #MyMarianos. After picking our apples and a few other pantry items, we headed home to bake!

1 Cup Unbleached White Whole Wheat Flour
1/2 Cup Organic Brown Rice Flour
2 Tsps Ground Ginger
1 Tsp Baking Soda
1/4 Cup Organic Unsweetened Apple Sauce
1/4 Cup Organic Honey
2 Cups Organic Apples, peeled, cored and chopped
1 Tbsp Chia seeds, soaked
1 Tbsp Vinegar
1 Cup water
1/2 Cup Dates, pitted and chopped *can use dry or fresh, fresh will be sticky!*
1/2 Cup Organic Cranberries, chopped

Mix together dry ingredients: flours, ginger and baking soda. In a separate bowl, mix the apple pieces, honey, apple sauce, fresh dates and soaked chia seeds. Add in the vinegar.
Then combine with the dry mixture, folding until fruit pieces are coated.  Add the water and combine well. Finally, fold in (the dried dates and) cranberries. Spoon the thick mixture into a standard loaf pan.
Bake at 350 degree Fahrenheit for 1 hour in the oven. Let cool completely in the pan.

Cut with a sharp knife and enjoy!
